Kulinaria w przestrzeni miasta : nowe trendy, nowe potrzeby mieszkańców

The subject of this article is culinary trends observable in Polish cities during the past few years. They include both the rediscovered practices, directly related to the cultural (culinary) heritage of a particular area, and these which have become popular only recently. According to the author, characteristic culinary fads are: the promotion of local delicacies on a large scale, growing interest in shopping in farmers’ markets offering organic produce (bio-markets) and traditional goods, growing popularity of street food (including street food festivals and picnics), and organizing the so called “breakfast on the grass” events.

The study was conducted in May-June 2013, in two places in the tourist area called "Mărginimea Sibiului", Sibiu, Romania. The research instrument used was a questionnaire comprising 25 questions and was sent to the owners / managers of pensions (18 people) by 9 people from rural places Sibiel and 9 people from Gura Râului. According to data from Sibiu County Tourism Association, in Sibiel there are recorded 40 tourist structures, and in Gura Râului, 22. Data from the field were processed, systematized and interpreted. The issue in question is the culinary heritage of Silesia, represented in the List of traditional products of the Ministry of Agriculture and Rural Development (created in 2004). Basing on the example of wodzionka and other soups made of water and bread, the authors bring emphasis to some important issues associated with the description of selected traditional foods and kitchen products that lead to understatements and overinterpretations. The article proposes also a new definition of traditional dish, which takes into account two elements of a recipe (fixed and variable).
